Delicious Mediterranean salad: prepare in 7 minutes – guests will ask for the recipe

The New Year's table is often overloaded with meat, mayonnaise and heavy salads. Give your guests a break by preparing a light, juicy Mediterranean-style salad. Its combination of salty feta, olives, crisp cucumber and aromatic herbs will create a fresh feeling like you're on the coast. And the main thing is that it is prepared quickly and simply.

You will need:

  • 150 g feta cheese
  • 10–12 pitted olives
  • 2 fresh cucumbers
  • 1 large tomato
  • 1 sweet red onion
  • bunch of parsley and mint
  • 1 tbsp. l. capers

For refueling:

  • 3 tbsp. l. olive oil
  • 1 tbsp. l. lemon juice
  • pinch of ground black pepper

Step-by-step preparation:

  • Cut the cucumbers and tomatoes into large cubes.
  • Finely chop the onion into half rings and scald with boiling water for 30 seconds.
  • Cut the olives and feta into arbitrary cubes or slices.
  • Finely chop the parsley and mint.
  • Mix everything in a deep bowl.
  • Season with olive oil, lemon juice and pepper. Stir as feta crumbles easily.
  • Sprinkle with capers for a spicy kick.

Serve immediately in a clear bowl or on a platter with lettuce. The salad is refreshing but rich, with a balance of salt, acid and herbaceousness. It goes perfectly with grilled meat, fish or just warm bread.
