
Ukrainian culinary specialist and restaurateur Evgeniy Klopotenko shared a recipe for gingerbread on his website.
Ingredients:
- 100 g honey;
- 100 g butter;
- 50 g sugar;
- 0.5 tsp. soda;
- 1 tsp. cinnamon;
- 1 tsp. ground ginger;
- two eggs;
- 400 g flour.
Ingredients for meringue:
- two egg whites;
- 100 g sugar;
- 1 tsp. lemon juice.
Preparation
- Combine honey, butter, sugar, baking soda, cinnamon and ginger in a saucepan. Place over low heat and cook until boiling, stirring constantly. When the mixture starts to foam, remove from heat and add a pinch of salt.
- Let the mixture cool, stirring constantly for one to two minutes. Add eggs and stir.
- Then add flour and knead the dough. Let it rest for 10-15 minutes in plastic wrap in the refrigerator.
- Roll out the dough between two sheets of parchment into a 0.5 cm thick crust.
- Cut out cookies using themed cutouts. Place on a baking sheet lined with parchment. Bake cookies for 10–12 minutes in an oven preheated to 180°C.
- For the meringue, beat the egg whites, sugar and lemon juice in a steam bath until the mixture thickens. Place the meringue in a pastry bag and decorate the finished cookies.
