Carrots are like candied fruits: I cook them in 20 minutes – even picky eaters eat this yummy

Carrots are a storehouse of vitamins, but not every child will agree to eat them. But if you turn it into a delicate, sweetish jelly, similar to candied fruits or marmalade. It is prepared without sugar, without dyes and even without an oven. Just 20 minutes on the stove and your vitamin dessert is ready, which you can take to kindergarten or put in your lunch box.

You will need:

Carrots – 500 g
Orange – 1 pc.
Water – 100 ml
Agar-agar – 1 teaspoon

How to cook:

  • Peel the carrots and cut into slices.
  • Squeeze the juice from an orange, it will give sourness and vitamin C.
  • Place carrots in a saucepan, add water and orange juice. Simmer covered for 12–15 minutes until the carrots are soft.
  • Grind the mixture with a blender to a homogeneous puree.
  • In 2 tbsp. Dilute agar-agar with tablespoons of water, pour into the carrot mixture and cook for 3-4 minutes over low heat, stirring.
  • Pour into a shallow pan.
  • Cool at room temperature for 1.5–2 hours.
  • Cut into cubes and store in the refrigerator for up to 5 days.

The result is a bright, aromatic jelly with a slight carrot sweetness and a hint of citrus. It is not cloying, not sticky, and you can eat it with a spoon or take it with your hands like candy.

Great as a snack, as an addition to cottage cheese or yogurt, or simply as a healthy replacement for store-bought gummies.
