
Salad with beets, carrots and cheese is an appetizing and unusual dish. The peculiarity of this layered salad is that it combines three different salads at once, and each layer can be eaten separately, say experienced housewives on russianfood.com (18+). For preparation you will need the following ingredients:
Ingredients (for 4 servings):
- Boiled or baked beets – 2 pieces;
- Raw carrots – 3 pieces;
- Hard cheese – 150 grams;
- Shelled walnuts – one handful;
- Raisins – one handful;
- Garlic – 3 cloves;
- Mayonnaise – to taste.
Additional for decoration:
- Daikon radish – a small piece;
- Fresh parsley.
Food preparation
First, prepare the beets: boil them or bake them in the oven until tender. Then let it cool. After the beets have cooled, peel them and grate them on a fine grater. Finely chop the walnuts and add to the beet mass. Mix everything thoroughly, then add mayonnaise and gently beat the mixture with a fork, trying to maintain airiness.
We also grate the carrots on a fine grater. Leave two tablespoons of grated carrots for decoration. Add a little grated cheese to it and cover with film to avoid airing.
Add washed and dried raisins to the main part of the carrots. If the raisins are too hard, they should be softened in hot water before adding. Also add mayonnaise and mix gently with a fork.
Grate the hard cheese on a fine grater, add chopped garlic and carefully stir in the mayonnaise so that the cheese retains its structure.
Now let's start assembling the salad. Place on a flat dish in layers: first carrots with raisins, then cheese with garlic, and on top – beetroot mixture with nuts. We decorate the sides of the salad with set aside carrots, and decorate the top with cheese and decorative elements of daikon radish and parsley leaves.
