How to make crispy nuggets without deep frying or breadcrumbs – golden like in a restaurant, but tender and juicy inside

Nuggets are a favorite dish of children and adults. But if you simply dredge chicken in flour and bake, they turn out pale, dry, or lack crunch. In fact, it all depends on proper preparation. And you don't need to deep-fry them or use store-bought crackers. All you need is an oven and a couple of simple ingredients from the cupboard.

If you use chicken fillet, cut it into walnut-sized pieces. Don't make it too small, otherwise the meat will dry out. For juiciness, add a little sour cream or natural yogurt to the minced meat. This will replace the marinade and retain moisture.

Before breading, soak the chicken for 10-15 minutes in the mixture:

  • 2 tbsp. l. yogurt or sour cream
  • 1 egg
  • a pinch of salt, paprika and garlic powder

This will soften the meat and add a light flavor.

No breadcrumbs are needed for a crispy crust. Take instant oats and puree them in a blender until crumbly. Add a pinch of paprika and salt and you get a natural, flavorful breading without preservatives.

Dip each piece of chicken first into the yogurt mixture, then into the oatmeal crumbs. Place on a baking sheet lined with parchment. Drizzle a teaspoon of vegetable oil on top. This is enough for a golden color.

Bake at 200°C for about 20-25 minutes, turning once halfway through. During this time, the nuggets will be covered with a golden brown crust, and the inside will remain juicy and tender.

Serve with your favorite sauce or vegetables.

Bon appetit!

Yes, a teaspoon on the entire baking sheet gives a golden brown crust without any grease.

Is it possible to freeze the preparations?
Yes. Freeze in a single layer, then place in a container. Bake without defrosting.
