
Gazpacho is a cold soup that is perfect for hot summer days. A great alternative to okroshka or beetroot soup! We suggest preparing this classic Spanish dish for dinner – the soup will refresh you in the heat and lift your spirits. The main highlight of our gazpacho will be pumpkin.
Ingredients:
- pumpkin juice – 500 ml;
- red bell pepper – 280 g;
- cucumber – 280 g;
- onion – 140 g;
- garlic – 2 cloves;
- olive oil – 80 ml;
- lemon juice – 50 ml;
- Tabasco sauce – to taste.
Peel and cut the onions, cucumbers and peppers, blend them in a blender with lemon and pumpkin juice, add olive oil, garlic, Tabasco sauce to the mixture and blend again in the blender. Chill the soup in the refrigerator and serve with hot, fresh bread. As you can see, it took literally 5 minutes to prepare – there was no need to cook or cut anything special, and yet on the table there was an incredibly tasty and refreshing Spanish soup that will delight the most picky husband.
