
“Previously, while working in a restaurant, I combined many different things and now I continue to do it,” he said.
According to Klopotenko, one of the first experimental dishes was a snack of fish and pumpkin.
“At first glance, it looks unusual, and on the second-like our snack with a herring. Beautiful, tasty in a new way,” he said.
The restaurateur cut the pumpkin into small pieces, laid out the slices of the herring on top, heted with spices, added a few drops of lemon juice and decorated with dill.
On his website, Klopotenko specified that preliminarily the pumpkin needs to bake a little, but at the same time it should remain a little hard. He advised to bake 12 minutes at 180 ° C.
“A pumpkin with herring is the case when you do not understand how it will be, and when you try, you experience a real gastronomic orgasm,” Klopotenko assured.
Context
In 2015, Klopotenko became the winner of the fifth season of the Mastershef culinary project on the STB channel. After the victory in the show, the TV channel invited the chef as an expert in several television projects.
Klopotenko is a co -founder of the social project Cult Food, the purpose of which is to change the culture of nutrition. TAkzhe he opened two restaurants – “100 Rocks to the Rock” in Kyiv and “INSHI” in Lviv.
