The return from France was more than a step for Cristian Preotu – it was the beginning of a mission: to bring to Romania the refinement of French gastronomy and respect for truly exceptional products. You have built a strong and appreciated brand in an extremely competitive field. What was the key moment in your entrepreneurial course and what is the story behind this project?

Cristian Preotu: The key moment was my return to Romania after a period spent in France, where I discovered the refinement of gastronomy and artisan culture of fine products. I felt that the Romanian public is prepared for an authentic, quality experience, and I started with the import of renowned brands such as Comtesse du Barry, Joseph Drouhin, Pétrus, Champagne Bollinger or Deutz. Le Manoir was first a distribution project, but the ambition to create a complete gastronomic scene naturally led to Le Bistrot Français.

Coherence is essential

Looking back, what lessons did Le Bistrot Français offer you and how did they guide you in the evolution of the project?

Cristian Preotu: I learned that excellence is never accidental. The details matter, and coherence is essential – from the selection of suppliers, to the team formation and how we build the relationship with each client. Each beginning challenge-either logistics, or related to the perception of the market-taught us to be rigorous, patient and brave.

The partnership with Tom Meyer marked a defining moment for Le Bistrot Français. How did this collaboration be born and what impact did it have on the gastronomic identity of the restaurant?

Cristian Preotu: It all came naturally, from the desire to take the gastronomic experience from Le Bistrot Français to the highest international level. Since the first meeting, I have discovered in Tom Meyer not only a remarkable chef, with two Michelin stars and the title of Meilleur Ouvrier de France, but also a visionary partner who shares our deep respect for the product, terroir and refinement.

During the time he worked with Anne-Sophie Pic, Tom coordinated the opening of several international restaurants, which offered a global perspective on culinary refinement and interaction between tradition and innovation. This experience was directly reflected in the vision he brought to Le Bistrot Français.

How do you manage to maintain, in time, that coherence that makes every detail – from menu to customer relationship – to really count?

Cristian Preotu: Through discipline, through a deep respect for our values ​​and through a team that understands our mission. Each decision – whether we are talking about the design of the dishes or the tone of communication – must reflect elegance, authenticity and refinement. Nothing is random.

Cristian Preotu: Not to rush things and not seek comfortable solutions. An authentic experience is built with time, with a lot of unseen work and respect for the client. To have a clear vision, but to remain receptive to feedback and not compromise when it comes to quality.
