How to recognize a real oscypek? It is worth asking that


While walking around Zakopane Krupówki, you can easily come across stands with local specialties. Oscypki is one of the symbols of this region, but not all are authentic.
According to the O2.pl portal, the reaction of one of the highlander was full of surprise when she heard Edyta's question about the certificate. “But you are kidding, do you seriously ask?” The highlander replied.
She finally admitted that she had a certificate, but in a different position. Other sellers who heard the same question had the required document with them, but information about the content of sheep's milk differed depending on the seller.
“When I asked how much this oscypek contains sheep's milk, one said, 70 percent and the rest is cow's milk, otherwise it would be dry. Other she argued that it was 100 percent of sheep's milk” – says the woman, quoted by 02.pl.
Oscypek is a regional product characteristic of Polish mountains. Entering it on the EU list of protected products resulted in the need to have a European Union certificate.
What does a real oscypek look like?
The key to identifying the original oscypek is the period when we want to buy it. Sheep give fresh milk from May to October, so apart from this period, it is difficult to find cheese that meets a traditional recipe with at least 60 % sheep's milk content.
The real oscypek is hard, dry, has a sharp taste and not very intense color – notes the portal zoneagro.pl
In turn, fakes are often soft, rubber, have a more intense color and a salty aftertaste. In addition, the use by sellers of names such as “highlander cheese” or “Bacowski cheese” may indicate the inauthenticity of the product.
