I eat this soufflé and my waist is in place: I prepare it in 25 minutes – an ideal dessert for those losing weight

If you want to treat yourself to a delicious dessert but are strictly controlling calories, this recipe is made for you. Airy, healthy and incredibly light cottage cheese soufflé will be a great end to the day and will give you a feeling of fullness without harming your waistline.

You will need:

Soft cottage cheese (up to 5% fat) – 200 g
Eggs – 2 pcs. Rice flour (or corn) – 2 tablespoons
Sweetener – 1-2 teaspoons
Vanillin or vanilla extract – a pinch

How to cook:

  • Mash the cottage cheese with a fork or beat with a blender until smooth and creamy without lumps.
  • In a separate bowl, gently beat the eggs with sweetener and vanilla until light foam appears.
  • Combine the curd base with the egg mixture, add rice flour and mix thoroughly until smooth.
  • Prepare small baking dishes.
  • Divide the mixture into the molds, filling them about three-quarters full, as the soufflé will rise when heated.
  • Place the molds in an oven preheated to 180°C for 20–25 minutes.
  • Check readiness with a wooden skewer: if it comes out dry and clean from the center, the dessert is ready.
  • Let the soufflé cool slightly in the molds, then carefully remove.
  • If desired, garnish with fresh berries or a sprig of mint.

Bon appetit!
