First of all, experts advise not to buy meat at spontaneous markets, but to give preference to specially equipped retail outlets where there are refrigerators and ventilation, and sellers have valid medical records.

When choosing, focusing only on the appearance of the marinated kebab is not enough. You need to carefully study the labeling.

“The grade of meat is better the highest or the first (lower grades have a lot of tendons). Date of manufacture – commercial marinade is stored for no more than 7 days (it is more reliable if the date is stamped on the jar). Pay attention to the composition, including the presence of preservatives and phosphates. The shorter the composition, the better. List of ingredients for a quality semi-finished product: pork, salt, vinegar, fresh onion, spices (pepper, ginger, coriander and others). If you choose kebab in a plastic bucket, then inspect the lid; normally it is slightly concave, but in no case swollen! Give preference to meat in original packaging, where there is not too much liquid. High-quality chilled meat absorbs the marinade, while frozen meat covered in vinegar, on the contrary, releases liquid. Marinades based on vinegar or lemon will preserve meat for up to 3 days, while options with mayonnaise or kefir spoil much faster. Follow these simple rules and your picnic will go without any unpleasant surprises,” Rospotrebnadzor said.
