Dangerous bacteria and fungi found in cakes produced in Krasnoyarsk

Specialists from the Krasnoyarsk branch of the Federal State Budgetary Institution “Tsok Agroindustrial Complex” checked the quality of confectionery products in the first quarter of 2026. As part of production control, 30 samples were examined.

Cakes, pastries, muffins, cookies, meringues, chocolates, dragees and fruit and berry marmalade were submitted for analysis. The products were tested for compliance with the requirements of the technical regulations of the Customs Union.

The laboratory assessed the safety, quality and microbiological characteristics of the products, including the presence of bacteria, yeast and mold, as well as the content of toxic substances and sugar levels.

As a result of the inspection, violations were found in four samples of cakes. They found an increased content of microorganisms: coliform bacteria, yeast and molds.

Information about non-conformities was sent to manufacturers for action.

Experts note that the appearance of such microorganisms is most often associated with a violation of production technology, the use of low-quality raw materials or non-compliance with sanitary standards. To ensure that products remain safe, strict controls are required at all stages – from production to storage.
