
The editors of the Ukrainian culinary website Shuba have published a recipe for creamy chicken soup.
“If you don’t prepare creamy soups, you are missing out on a lot! This soup with chicken, rice and mushrooms is very tasty and filling. Thanks to the large amount of vegetables, it is not only aromatic, but also healthy! This dish is the best solution after a long walk in the forest or park,” the website says.
Ingredients:
- 60 g butter;
- three cloves of garlic;
- 225 g champignons;
- one onion;
- three carrots;
- two stalks of celery;
- dried thyme;
- 40 g flour;
- 800 ml chicken broth;
- 200 ml milk;
- 180 g rice;
- two chicken fillets.
Preparation
- Melt the butter in a large, heavy-bottomed saucepan.
- Add chopped mushrooms, onions, carrots and celery. Cook, stirring, until the vegetables are soft and the liquid has evaporated, about six minutes.
- Add the chicken and fry until golden brown for three to four minutes, then add the minced garlic and thyme and stir until fragrant. Season with salt and pepper.
- Add flour and cook, stirring, until golden brown.
- Pour in chicken broth and milk, season with salt and pepper.
- Add the rice and bring to a boil until the rice is tender and the chicken is cooked through.
- Add seasonings to taste and serve.
