
You need to cook the meat in a large amount of water – it should be completely covered with water. This will prevent the top part from drying out, which will be uncovered by water as it evaporates.
It is advisable to cook the beef over moderate heat, avoiding intense boiling, and it is better to keep the lid slightly open. If you cook the meat over high heat, the broth will turn out cloudy and tasteless.
It is recommended to salt the meat at the very end, 15 minutes before cooking – if you add salt at the very beginning, it will begin to actively “pull out moisture from the muscle fibers and the meat will turn out drier and tougher.
