Quick pancakes with green onions and eggs


Ukrainian culinary specialist Evgeniy Klopotenko shared a recipe for pancakes with eggs on his website.

“I love the combination of dough and boiled eggs with herbs. Most often it is found in pies, but you don’t always have time to prepare such a dish. Instead, I suggest making quick pancakes with green onions and eggs. They are suitable for breakfast, as an addition to lunch or as a hearty snack option,” noted Klopotenko.

Ingredients:

  • 300 ml kefir with a fat content of 2.5%;
  • 50 g sour cream;
  • 0.5 tsp. baking powder;
  • 1 tsp. salt;
  • 230 g flour;
  • one bunch of green onions;
  • two sprigs of dill;
  • two boiled eggs;
  • 2–3 tbsp. l. vegetable oil.

Preparation

  1. Mix in a deep bowl 300 ml of kefir, 50 g of sour cream, 0.5 tsp. baking powder and 1 tsp. salt.
  2. Add 230 g of flour, knead into a thick dough.
  3. Finely chop a bunch of green onions and two sprigs of dill. Cut two boiled eggs into cubes. Add herbs and eggs to the dough and mix well.
  4. Heat the pan well by adding 2-3 tbsp. l. oils Drop the dough using a tablespoon.
  5. Fry until golden brown, two to four minutes on one side, until holes appear. Turn over and cook on the other side. Serve with your favorite sauce.
