Russians will begin to sell bread according to the new GOST instead of the Soviet one

On April 1, a new interstate standard for white bread made from wheat flour comes into force in Russia. It will replace GOST, which has been in force since 1986, RIA Novosti writes.

The new standard expands the capabilities of manufacturers. Now it is allowed to produce bread weighing less than 500 grams – previously the lower limit was strictly from half a kilogram. Oval-shaped hearth bread was also allowed.

Recommendations on the period of sale in stores were removed from GOST – previously it was 24 hours from the moment of removal from the oven. At the same time, the maximum aging time for bread at the enterprise after baking remains the same – no more than 10 hours.

The document clearly states the permitted raw materials: different types of wheat flour, yeast, salt, water, sugar. It also allows the use of some food additives – substances for processing flour, antioxidants and enzyme preparations.

Let us add that at the same time the first GOST for potato chips is being introduced. Previously, there were no uniform requirements for this product, writes Sever-Press. Chips should be made from natural potatoes or processed products, crispy, with a characteristic taste. Up to 20% brown flakes and up to 25% crumbs are allowed, and fat content is limited to 45% for natural chips and 35% for processed chips. Packaging is vacuum only.

Rosstandart explained that the unification of requirements in the CIS will reduce technical barriers and simplify control. Most GOSTs in Russia are advisory in nature and serve as guidelines for manufacturers. They become mandatory only when directly specified in the law or contract.
