
Freezing greens is an easy and convenient way to keep them fresh for a long time. This is especially true at the end of the season, when you want to stock up on healthy greens for future dishes.
First, prepare the greens: sort through, remove damaged or yellowed leaves and rinse thoroughly under running water. After this, dry well, you can lay it out on paper towels or use a colander. The main thing is that there is no excess moisture left, otherwise the greens will stick together when frozen.
Finely chop the greens with a knife or scissors. You can freeze large pieces or whole leaves, but small cuts take up less space and thaw faster when used.
The easiest way is to use ice cube trays. Place the chopped greens among the cells, filling them about halfway. Then fill each cell with water or olive oil. The water helps maintain freshness, while the oil protects against oxidation and adds flavor. Place the molds in the freezer for several hours until the mixture is completely set.
After this, take out the cubes and put them in tight bags or containers for long-term storage. This way you will save space and can easily take exactly as much as you need.
At the right freezer temperature (around -18°C), frozen greens will remain flavorful and healthy for up to 6-8 months.
