You will need:
Fresh cucumbers – 3 pcs.
For refueling:
- Greek yogurt without additives – 100 g
- freshly squeezed lemon juice – 1 tbsp. l.
- honey – 1/2 tsp.
- fresh mint – 5-6 leaves
- garlic – 1 clove
- salt – a pinch
How to cook:
- Cut the cucumbers into thin slices or strips.
- In a small bowl, whisk together yogurt, lemon juice, honey and salt.
- Add finely chopped mint and squeezed garlic. Stir.
- Pour the dressing over the cucumbers and toss gently to coat each piece with the sauce.
- Let sit for 10 minutes at room temperature, this is enough for the cucumbers to be slightly soaked but still crisp.
Serve in a clear bowl or on a platter with herbs. The appetizer goes well with boiled pork, smoked fish, pancakes with caviar, or simply with warm bread.

You can, but first drain the whey or strain the yogurt through cheesecloth for 15 minutes so that the dressing is not liquid.
