You will need:
Potatoes – 4 medium tubers
Eggs – 4 pcs.
Hard cheese – 80 g
Fresh herbs – a small bunch
Salt, black pepper, a pinch of ground garlic – to taste
Olive or sunflower oil – 1 tbsp. l.
How to cook:
- Preheat oven to 200°C.
- Wash the potatoes without peeling them and boil them in their skins for 15 minutes; they should remain firm inside.
- Cool, cut in half and carefully remove the core with a spoon, leaving the walls 0.5–1 cm thick.
- Grate the removed pulp on a fine grater, mix with grated cheese, chopped herbs, spices and butter.
- Fill the potato halves with this mixture.
- Beat one egg into the center of each “boat”.
- Place on a baking sheet lined with parchment.
- Bake for 15 to 18 minutes until the whites are set and the edges of the potatoes are lightly browned.
- Serve hot, lightly sprinkled with fresh herbs.
The dish turns out satisfying, but not heavy.
