Products:
- 350 g flour;
- 250 g kefir;
- a pinch of salt;
- 1 tsp. soda;
- 400 g minced pork;
- 100 g carrots;
- onion: one for minced meat, the second for cracklings;
- 1 tbsp. l. tomato paste;
- 30 g water;
- 20 g butter;
- 1 tsp. dry garlic;
- 0.5. tsp black pepper;
- 100 g lard;
- dill and sour cream for serving.
Preparation
- Combine flour, kefir, salt and soda, knead the dough.
- Wrap it in cling film and let rest for 30 minutes.
- In a preheated frying pan, fry the chopped carrots and onions until soft. Add the minced meat and cook, stirring, for six minutes.
- Add tomato paste, water and spices. Stir and heat for another four minutes until excess moisture evaporates.
- Turn off the heat and add a knob of butter.
- Prepare the cracklings. To do this, fry the chopped lard over medium heat in a dry frying pan until golden brown. Remove the cracklings and drain off excess fat. Over low heat, slowly caramelize the onions until deep brown. Combine rendered fat, onion and cracklings.
- Form dumplings with meat from the dough. Cook the dumplings in a steam bath for seven minutes.
- Serve dumplings with cracklings and sour cream, sprinkled with dill.
