
If you want to put together a dinner that will fill you up, won't harm your figure, and still looks like a restaurant dish, try this combination. It's great for after work and for weekends when you don't want to stand at the stove for hours. The main thing is to cook the quinoa in advance, and then everything comes together in a few minutes.
What you will need:
Ready chicken breast – 150 g
Quinoa – 1/2 cup
Cucumber – 1/2 pcs.
Tomato – 1 pc.
Sweet pepper – 1/2 pcs.
Green onions or dill – a handful
Olive oil – 1 tbsp. spoon
Lemon juice – 1/2 teaspoon
Salt, pepper – to taste
How to do:
- Cut the chicken into cubes or shred.
- Warm the quinoa slightly in a frying pan or in the microwave.
- Cut the vegetables into small pieces: cucumber into slices, tomato into slices, pepper into strips.
- In a deep bowl, combine quinoa, chicken and vegetables.
- Add herbs, sprinkle with lemon juice, pour over oil, salt and pepper.
- Mix carefully and place on a plate. Can be served in layers or simply in a mound.
