It’s a pity to throw it away, and jam with kilograms of sugar is not an option. But there is a solution: a delicate, fragrant jam that is prepared in one evening and is stored until spring.
What will be needed:
Apples – 1 kg
Pears – 1 kg
Lemon – 1 piece
Cinnamon – 1 teaspoon
Vanilla extract or vanilla sugar – 1 teaspoon
Clean jars with twisting lids – 3-4 pieces of 0.5 liters
How to cook:
- Apples and pears are washed, cut out the core, but they do not remove the peel, since it has a pectin that gives density.
- Cut into cubes and put in a pan with a thick bottom.
- They add a little water so that they do not burn, and boil under the lid for 15 minutes over medium heat.
- When the fruits become soft, the mass is crushed by a blender until smooth.
- Whoever loves pieces, just kneads with a bustle.
- Then pour lemon juice, add cinnamon and vanilla, and languish on low heat for another 20–25 minutes, stirring.
- Readiness is simply checked: a drop does not spread on a cold plate, then the jam is ready.
- Hot jam is poured into dry, clean jars, covered with lids and turned upside down for 10 minutes. Due to the acid of citric and natural acidity of fruits, it is perfectly stored without sterilization.
