A glass in the dough in front of flour – pancakes are thin, air, with holes: they never stick

Fans of thin and air pancakes know that this is not so simple. But an experienced mistress from the Zen channel “Wow, the kitchen” (18+) shared a secret: you need to pour 1 ingredient before pour flour. And then pancakes are thinner than paper. This is the case when the dough does not require culinary knowledge, and the result is beautiful each time.

And this ingredient is ordinary boiling water. Pancakes are called custard. Forget about the first unsuccessful pancake, which should be a “lump”, with this recipe it will always turn out perfect. Classic proportions – exactly “2 glasses”: and milk, and flour, and boiling water. A glass can be any.

What you need

  1. 4 eggs;
  2. 2 cups of boiling water;
  3. 2 cups of milk;
  4. 2 cups of flour;
  5. 2 tbsp. l. vegetable oil;
  6. 1 tsp. salts;
  7. 2 tbsp. l. sugar (optional), if you want sweets.

How to cook

Break the eggs into a bowl, add salt and (if you want) sugar. Beat. Gradually, a thin stream, pour boiling water – without stopping whipping (the eggs will not curl up, and the mass will become lush). Add milk, mix again. Pour the flour and pour in the oil. Stir again thoroughly so that there are no lumps. The dough should be liquid.

Fry in a heated pan – pancakes instantly bake, do not stick, easily turn over.

Such pancakes are universal: they can be eaten hot with butter, sour cream, jam, condensed milk. Cooling – perfectly stuffing everything at hand: from cottage cheese to meat or mushrooms.
