Probably everyone loves pancakes – delicate, thin ones that simply disappear in the mouth. Many families love to make them for breakfast, and a successful recipe plays a decisive role here, which determines both taste and texture. But if you dream of pancakes that are not just thin, but real lacy, thinner than paper, you need to add one tricky ingredient to the dough. Regular boiling water: this is what turns pancakes incredibly tender and light. Our subscriber Alexandra told us how to do everything right.

What products are needed

For this recipe, take a glass of wheat flour, two chicken eggs, a glass of milk and a glass of boiling water, as well as salt to taste and two tablespoons of vegetable oil.

Let's prepare step by step

To begin, crack a couple of eggs into a bowl, sprinkle with a pinch of salt and beat until light and fluffy. The better you beat the eggs, the fluffier the dough will be.

The next step is to pour in boiling water. The whole point here is to get very thin, almost transparent pancakes. Add a glass of boiling water in a thin stream, continuing to whisk the mixture. Hot water is responsible for the elasticity of the dough and the delicate structure of the finished pancakes.

Now, while continuing to stir, add a glass of cool milk. The milk will make the dough softer and smoother, which is key for a thin consistency.

Carefully add a glass of sifted flour, stirring constantly so that no lumps remain. The resulting dough should be smooth and homogeneous.

Pour in two tablespoons of vegetable oil. It will prevent the pancakes from sticking to the pan, plus it will add a pleasant golden hue and tenderness to them.

Place the frying pan over medium heat, heat well and lightly grease with oil (olive or melted butter will do). To ensure that the pancakes come out as thin as possible, the pan must be as hot as possible. Pour a little dough and spread it over the entire surface, turning the pan in different directions. Fry on each side for 1-2 minutes until beautifully golden brown.
