The housewives were given a simple recipe for Maslenitsa pancakes that even a beginner can handle. Thin, tender, with delicate holes, they turn out like grandma’s, but are prepared in just 20–25 minutes. Ideal for a spontaneous tea party or a cozy Sunday breakfast. Everything you need is already in your kitchen.
Ingredients:
Warm kefir – 1 glass
Egg – 1 pc.
Flour – 180–200 g
Sugar – 1-2 tbsp. spoons
Salt – a pinch
Soda – ½ teaspoon
Vegetable oil – 1 tbsp. spoon into the dough + a little for the frying pan
Cooking method:
- In a bowl, mix warm kefir, egg, sugar and salt. Beat well with a whisk.
- Add soda. The mass will foam slightly.
- Gradually add the sifted flour, stirring constantly so that there are no lumps.
- Pour in vegetable oil and stir until smooth. The dough should be like liquid sour cream and flow easily from a spoon.
- Let stand for 5-7 minutes. This is enough for the baking soda to work and for the gluten to swell.
- Heat the pan well. There is no need to grease with oil, it is already in the dough.
- Pour in a thin layer of batter, spreading it with a slight twist of the pan.
- Fry over medium heat until golden brown on both sides.
Serve the pancakes hot with sour cream, honey, jam or simply sprinkled with powdered sugar. They can be wrapped, folded into an envelope, or served in a stack, topped with melted butter.
These pancakes are a real symbol of Maslenitsa: sunny, warm and uniting the whole family at one table.
Bon appetit!
