The most cozy dessert for Christmas: “Cranberries in honey” without baking – sour, tender, homemade

If you want a dessert that will remind you of your childhood, but will look like it’s made of gloss, prepare “Cranberries in Honey.” This is a combination of tart cranberries, sweet orange and airy curd mousse. It perfectly balances against the background of Olivier and red caviar, and is prepared without an oven or eggs.

Warp:

  • Shortbread cookies – 150 g
  • Butter – 60 g

Curd-orange layer:

  • Cottage cheese 5–9% – 300 g
  • Cream 33% – 150 g
  • Honey – 2 tbsp. l.
  • Zest of 1 orange
  • Gelatin – 10 g
  • Water – 50 ml

Cranberry jam-jelly:

  • Fresh or frozen cranberries – 200 g
  • Sugar – 3 tbsp. l.
  • Water – 50 ml
  • Gelatin – 8 g
  • Water for soaking – 40 ml

How to cook:

1. Base

Grind the cookies into crumbs and mix with melted butter. Place in a springform pan, compact and place in the refrigerator for 30 minutes.

2. Curd layer

Pour gelatin into 50 ml of water and leave for 10 minutes. Rub the cottage cheese through a sieve or beat with a blender until smooth. Whip the cream with honey to soft peaks, add cottage cheese and zest. Heat the gelatin until dissolved, add it to the curd mass, and stir quickly. Pour onto the base and smooth out. Refrigerate for 1.5 hours.

3. Cranberry layer

Heat the cranberries with sugar and water on the stove for 5 minutes, mash with a masher, strain through a sieve. Bring until warm. Pour gelatin into 40 ml of water and melt after 10 minutes. Pour into cranberry juice and stir. Carefully pour over the set mousse.

Refrigerate for at least 4 hours, preferably overnight. Carefully remove pan before serving. Garnish with fresh cranberries, a sprig of rosemary or candied orange.

The dessert holds its shape, does not separate and exudes the aroma of winter compote and the holiday.
