
Almost every January 1st begins with the sad finishing of holiday dishes. But if you look creatively at the leftovers from the holiday table, you can turn them into independent, tasty and modern dishes.
The housewives suggested several ideas that could create a new dish from yesterday's salads.
From salads
If you have leftover Olivier or vinaigrette that you haven’t had time to season, don’t rush to mix it with mayonnaise. This is an almost ready-made vegetable base for cutlets.
- Add 1-2 eggs and 2 tbsp to the vegetable mixture. l. flour or semolina for binding. Form small cutlets and fry in a frying pan on 2 sides until delicious golden brown.
- Serve with fresh sour cream or dill yogurt sauce. Ideal for a hearty breakfast or light dinner.
From meat dishes
A large piece of leftover turkey or chicken shouldn't languish in the refrigerator. It can be turned into a delicious spread for a buffet table.
- Finely chop the meat or disassemble it into fibers. Mix with soft cream cheese, herbs (parsley, dill) and a pinch of black pepper.
- Spread on chips, crackers, slices of fresh baguette or in prepared tartlets. An elegant appetizer is ready in 10 minutes.

If there is a lot of it left, we will give it a new, compact form.
- Place a portion of the salad in a blender, add a couple of spoons of cream cheese or sour cream for a creamy texture. Beat until you have a smooth, smooth paste.
- Spread on warm toast and serve with fresh cucumber. A familiar taste will sparkle in a new way.
From fruit slices
Tangerines, oranges, pomegranates and berries, which served as table decorations, can become the basis for a wonderful dessert sauce.
- Simmer the fruit over low heat with a couple of tablespoons of water and a pinch of cinnamon or vanilla until soft. Rub through a sieve or beat with a blender.
- Pour warm sauce over cheesecakes, pancakes, cottage cheese or ice cream.
Despite these tips, always treat leftovers as semi-finished products, and say goodbye without regret to anything that has lost its appearance and freshness.
And these simple transformations will save time, mood and become a pleasant culinary experiment on the first day of January.
