
New Year's salad “Horseshoe” is a bright and tasty decoration for the festive table, especially relevant in the Year of the Horse. This symbolic dish not only pleases the eye with its shape, but also brings good luck, abundance and good mood. The salad is prepared from available ingredients: chicken fillet, eggs, cheese, vegetables and carrots in Korean style, and is decorated with fresh vegetables in the shape of a horseshoe – a traditional amulet against troubles and adversity. Salad base:
- Chicken fillet (boiled or baked) – 2 pcs.
- Chicken eggs (boiled) – 4 pcs.
- Korean carrots – 200 g
- Red onion – 1 pc.
- Hard cheese – 150–200 g
- Homemade mayonnaise – 300–400 ml
For decoration:
- Fresh cucumber – 1 pc.
- Radishes – 4–5 pcs.
- Black and green olives – 15 pcs.
- Quail eggs (boiled) – 5 pcs.
- Fresh tomatoes – 3 pcs.
Preparation:
Prepare the ingredients:
- Boil the chicken fillet in salted water for about 30 minutes or bake in the oven at 180–190 °C for 30–40 minutes (you can rub with spices and bake in foil). Cool and cut into small cubes.
- Boil the eggs hard (10 minutes), cool, peel.
- Cut the onion into small cubes.
- Korean carrots can be lightly washed to remove excess oil and dried a little.
- Grate the cheese and egg whites on a fine grater.
- We form a “horseshoe”:
Place grated egg whites in a horseshoe shape on a large flat dish – this will be the basis for decoration.
Using a bag of mayonnaise (corner cut off), make a mesh over the egg whites to secure the shape.
Lay out the layers:
First layer: Place the chicken fillet tightly, level it and brush with mayonnaise.
Second layer: lay out the onions, distribute evenly and cover again with a thin mesh of mayonnaise.
Third layer: Carefully distribute the carrots in Korean style, grease well with mayonnaise.
Fourth layer: sprinkle with grated yolk, then grease the top and edges with mayonnaise.
Top layer: Sprinkle with grated cheese and generously sprinkle the edges of the horseshoe with it.
Final stage:
- Gently wipe the edge of the dish with a napkin if any dressing gets on it.
- Cover with cling film and leave in the refrigerator for 2-3 hours to soak – this will make the salad juicier and more aromatic.
Decoration before serving:
- Place halves of olives along the edge of the salad – black and green alternate, like a decorative edging.
- Place on top: Halves of quail eggs – create the effect of pearls.
- Tomato roses – cut tomatoes into petals and roll.
- Radish Flowers – Slice thinly and plunge into ice water to curl.
- Cucumber sprigs – cut into slices and arrange like foliage.
