The lightest pies: you can eat after 20:00 – slim waist for May

This recipe is suitable for those who are watching their figure, but are not ready to say goodbye to baking. Our hero today is PP pies in the air fryer. Not an ounce of wheat flour, oil or heat in the pan. The instructions were shared by an EAOMedia correspondent.

Ingredients (for 4-6 small pies)

The base is cottage cheese and rice flour. No yeast, no fuss.

  • Eggs – 4 boiled + 1 raw (bunch)
  • Cottage cheese – 180 g (soft, preferably 5–9%)
  • Hard cheese – 50 g (grate on a fine grater)
  • Rice flour – 4 tbsp. heaped spoons
  • Green onions – a small bunch (finely chopped)
  • Salt – to taste

How to cook

In a deep bowl, mash the boiled eggs and cottage cheese with a fork. No need for a blender – just leave it with a light texture. Add grated cheese, raw egg, rice flour and green onions. Add some salt. Stir until smooth. You will get a soft, slightly sticky dough.

With wet hands, form pies (classic flatbreads or balls, flattened on top). Place in the air fryer on a wire rack (or in a bowl if there is a “Bake” setting).

Important: the time depends on the air fryer model. If you like a golden brown crust, add another 3-5 minutes at the end.

Reviews

“The inside is tender, the top has an appetizing crust. My husband ate it and didn’t understand that it was PPshnye. He said, “Bake some more.” You can’t feel the rice flour at all. Now this is my favorite for a quick meal”;

“The pies didn’t fall apart, they kept their shape. Green onions give freshness. Life hack: add boiled chicken fillet (finely chopped) – you’ll get a complete post-workout snack. I give it an A”;

“The recipe works in terms of composition, but it’s a little dry. It took me all of 20 minutes at 200°C – it became harsh, like rubber washers. And it’s better to really beat the salt with spices (dry garlic + paprika), otherwise it’s bland.”
