Maslenitsa is a time of joy, comfort and a generous table. And if you want to surprise your loved ones with something especially tender and homemade, try the sweet filling of cottage cheese, banana and honey. It turns out airy, slightly creamy, with a light fruity note.
Ingredients:
Cottage cheese 5–9% – 250 g
Ripe banana – 1 pc.
Honey – 1-2 tbsp. spoons to taste
Vanilla sugar or extract – a pinch
Sour cream or natural yogurt – 1-2 tbsp. spoons
How to cook:
- In a bowl, mash the cottage cheese with a fork until smooth. If it is grainy, you can punch it with a blender.
- Add peeled banana and mash it together with cottage cheese.
- Add honey, vanilla and, if desired, a little sour cream for tenderness. Stir until creamy.
- The filling is ready immediately and does not require cooking or cooling.
Place 1-2 tablespoons of filling on each warm pancake and carefully roll it up or fold it into an envelope.
Serve the pancakes hot, you can additionally drizzle with honey, sprinkle with cinnamon or garnish with fresh berries. Children especially like this dessert, while adults will appreciate its lightness and natural taste.
This filling is an excellent alternative to jam and condensed milk. It is nutritious, but not cloying, and goes well even with simple kefir pancakes.
Bon appetit!
