A lazy recipe for the most delicate “Red Velvet” for the New Year – even a beginner can create a masterpiece in 1 attempt

If you think that “confectionery” is not for you, here is your last chance to convince yourself. Try making the famous Red Velvet Cake for your New Year's table using a lazy recipe. Even if you are new to cooking, the result will please you and your loved ones.

Ingredients:
For the test:

  • Kefir – 280 ml
  • Vegetable oil – 300 ml
  • Soda – 1 tsp.
  • Eggs – 3 pcs.
  • Sugar – 300 g
  • Red food coloring – 2 tbsp. l. (liquid or gel)
  • Flour – 340 g
  • Baking powder – 2 tsp.
  • Cocoa powder – 1 tbsp. l.

For cream:

  • Butter – 250 g
  • Powdered sugar – 70 g
  • Milk – 2 tbsp. l.
  • Philadelphia cheese – 260 g

Preparation:
Prepare the base:

  1. Mix 280 ml of kefir with 1 tsp. soda Stir and let the mixture sit for a while.
  2. Pour in 300 ml of vegetable oil and stir well.

Prepare the liquid part of the dough:

  1. Beat 3 eggs with 300 g of sugar until fluffy foam.
  2. Add 2 tbsp. l. red dye and stir.

Mix dry ingredients:

  1. Combine 340 g flour, 2 tsp. baking powder and 1 tbsp. l. cocoa.

Knead the dough:

  1. Add the dry ingredients to the kefir mixture and stir until smooth.

Bake the cakes:

  1. Divide the dough into two parts. Bake each biscuit in an oven preheated to 170°C for 50 minutes.
  2. Check readiness with a toothpick – it should come out dry.

Prepare the cream:

  1. Beat 250 g butter with 70 g powdered sugar.
  2. Pour in 2 tbsp. l. milk and continue whisking.
  3. Add 260 g of Philadelphia cheese and mix with a mixer on low speed.

Assemble the cake:

  1. Trim the cooled cakes, cutting off the protruding parts, and cut each into 3 layers. There will be 6 cakes in total.
  2. Coat the cakes with cream, grease the sides and top of the cake.
  3. Sprinkle the cake with sponge crumbs from the cake scraps.

Let it soak:

  1. Place the cake in the refrigerator for several hours until it is well soaked.
