
This simple recipe has become a real lifesaver for housewives. Beetroot caviar is suitable as a salad, as a side dish, and as a spread on bread – especially fresh white, lightly toasted. This is the kind of caviar that many people remember from kindergarten. The author of the Zen channel “Alina Kalinina” (18+) shared her recipe, which has helped her out for more than one winter, and it takes only 30 minutes to prepare.
Ingredients:
- Boiled beets – 1 kg
- Onion – 1 large onion
- Vegetable oil (refined) – 50 ml
- Tomato paste – 1.5 tbsp. l.
- Sugar – 1 tbsp. l. (optional)
- Salt – to taste
- Lemon juice – 20 ml
- Ground pepper, bay leaf – optional
Cooking method:
Boil and cool the beets, then grate them on a coarse grater. Finely chop the onion and fry in vegetable oil until soft and golden brown. Add beets, tomato paste, salt and sugar to the onion (if the vegetable is already sweet, you can do without sugar). Pour in lemon juice. If desired, sprinkle with ground pepper and add a bay leaf. Cook over moderate heat for about 15 minutes, stirring occasionally.
How to serve?
- When cold it is an excellent salad.
- Hot – a simple side dish for meat or potatoes,
- On bread or toast – a quick and very tasty snack
