You will need:
1 small head of cauliflower
2 tablespoons olive oil
1 clove of garlic
50 g hard cheese
1 teaspoon lemon juice
Salt and nutmeg to taste
How to cook:
- Disassemble the cabbage into inflorescences, boil in salted water until soft, drain and dry well.
- Place the cabbage in a blender, add olive oil, minced garlic, lemon juice, salt and a pinch of nutmeg.
- Blend until smooth and creamy. If you want a richer taste, add a little grated cheese and taste again.
Serve chilled.
