I plant exactly these: 3 varieties of tomatoes for storage – dense, aromatic, do not crack in the jar

If you dream of cutting a juicy, aromatic tomato from your own garden into a salad in February, it is important not just to harvest the crop, but to choose the right variety. Regular market tomatoes are soft, watery, and spoil quickly. And for storage and preparation, you need fruits with dense pulp, thick skin and low moisture content. These don’t wrinkle when salted, don’t burst in the marinade and stay in boxes until the New Year, and sometimes longer.

Among dozens of varieties, I selected three that do not fail either during storage or preservation.

Honey cream – a variety with fruits in the form of elongated cream, weighing 80–100 g. The skin is dense, the pulp is low-seeded, sweet with a honey tint. It is ideal for salting whole, does not crack, does not wrinkle, and keeps its shape. It stays in the cellar for up to 2.5 months without losing its taste.

Sanka – early, productive and surprisingly resistant to rot. The fruits are round, weighing 70–90 g, bright red, with dense but tender pulp. Great for tomato paste, sauces and juice because it contains almost no water. Even in an apartment, it stays in a cardboard box for at least 6–7 weeks.

Cio-chio-san – a Japanese variety with small tomatoes that last longer than large ones. They are dense, sweet, with thin skin and rich flavor. Ideal for lightly salted preparations and as “tomato candies” in salads. In a cool place they do not spoil until January, and in the freezer all winter.

How to store tomatoes so they don't rot?

  • Collect in dry weather, do not wash, just gently brush off the soil.
  • Store in wooden boxes or cardboard boxes in a single layer, lined with dry straw, paper or onion peels.
  • The temperature should be from plus two to plus eight degrees, moderate humidity.
  • Do not seal it tightly under any circumstances. Tomatoes breathe, and without air they will begin to mold.
  • Check once a week and remove spoiled ones so that the rot does not spread to neighboring ones.

These tomatoes are the basis for homemade preparations without vinegar, fresh salads in November and real tomato juice without additives. They are not as juicy as the July ones, but they are much more fragrant, denser and more reliable, and that is why I plant them.
